We at CHIMM want to give the most delectable meals to the Charlottesville public while preserving the presentation of those meals that we remember back home. So, we do not offer courses, just like in Thailand; our kitchen sends food out as soon as it is ready in order to ensure its freshness. Our food is also meant to be shared (check out our small plates!) as we encourage a family-style of dining that embodies our restaurant— from the people, the decor, and of course— the food. We also have done away with spice levels of our dishes, as terms like “Thai hot” are Americanized terms and we would love to fully capture the essence of foods we remember from back home like Pad See Ew, Kao Soi, and Som Tum (Papaya Salad). Spice trays, of course, are on hand to spice your dish up any way you like. We hope you come dine with us soon, and we sincerely thank you for being part of our family at CHIMM!
